Cooking for Diabetics

Found this old cookbook on the Internet titled Diabetic Cookery, by Rebecca w. Oppenheimer, copyright 1917. 

Oppenheimer was reportedly a diabetic who spent eight years in a treatment center for diabetics.

In the book, there are numerous recipes calling for aleurone flour.

Aleurone flour is a novel food product derived from the aleurone layer of wheat grain. This layer, located between the bran and the endosperm, is rich in essential nutrients, particularly folate. Aleurone flour is produced using a specialized milling process that isolates and extracts the aleurone layer, resulting in a flour that is a concentrated source of vitamins, minerals, and dietary fiber.

Never heard of it until now. May be a healthy alternative to processed white flour. All sorts of recipes out there, including bread, cereals, pancakes, waffles, pasta, pizza, tortillas, and snacks.

The truth about the importance of a low carb diet for diabetes was known 100 years ago. Unfortunately this knowledge was lost with the advent of diabetes medications. The book was published in 1917, when low carb diet was the only treatment available and five years before the discovery of insulin in 1922.

General Baking Tips from the Internet:

When substituting aleurone flour for other flours, it's recommended to start with smaller amounts and gradually increase until desired consistency is achieved. 

Aleurone flour's high fiber content can impact the dough's texture and rise, so adjustments may be necessary. 

It's also important to consider that aleurone flour may contribute a slightly nutty or earthy flavor to baked goods.

The book also advises foods that strictly forbidden:

Sugars, Beets, All Large Onions, Pies, All Sweet and Dried Fruits, Puddings, Flour, Honey, Bread, Biscuits, All Sweet Wines, Rice (by permission only), Liqueurs, Cordials, Stout, Porter, Syrups, Oatmeal (by permission only), Ale, Tapioca, Macaroni, Chocolate, Condensed Milk. 

Holy crap! I eat all these things, and I am diabetic.

I can't even imagine what some of these meats are and what they look like!
